Momoreoluwa Ayinde was excited to see a little piece of home prepared in the Mount Carmel Dining Hall on Thursday.

As the winner of the “Mom’s Best Recipe” contest, the first-year computer science major with a minor in applied statistics and data science from Lagos, Nigeria got to see her favorite homemade meal, jollof rice, cooked by professional chefs and served to students.

Ayinde was ecstatic to see her recipe on the menu and hopes that an increasing number of international dishes will continue to be included in the future.

“It was wonderful to see my home meal represented in the dining hall. I felt my voice was heard and my opinion was valued,” said Ayinde. “Jollof rice is a staple in most Nigerian households. The chefs did an excellent job replicating the recipe.”
